Chicken Kabsa

Introduction: Chicken Kabsa is a traditional Saudi Arabian dish that’s both aromatic and flavorful. It’s made with spiced rice and tender chicken, often garnished with nuts and raisins.

Ingredients:

  • 1 whole chicken, cut into pieces
  • 2 cups basmati rice
  • 4 cups chicken broth
  • 1 large onion, chopped
  • 2 tomatoes, chopped
  • 1/4 cup raisins
  • 1/4 cup slivered almonds, toasted
  • 2 tbsp Kabsa spice mix (cumin, coriander, cinnamon, cardamom, and cloves)

  2. Add the chicken pieces and Kabsa spice mix, and cook until the chicken is browned on all sides.
  3. Add tomatoes and cook for another 5 minutes.
  4. Add the chicken broth, bring to a boil, then reduce heat and simmer for 30-40 minutes until the chicken is tender.
  5. Remove the chicken and set it aside. Add the rice to the pot, cover, and cook until the rice is done.
  6. In a separate pan, toast the almonds and raisins.
  7. Serve the chicken over the rice, garnished with toasted almonds and raisins.
